What would be a good, quick way to explain why the slope of a pressure vs time graph of experimental data of a sample of gas at constant volume should lead to an x-intercept of -273.15?

Charles' law relates to Volume and Temperature. I'm not sure where pressure and time are coming from in your question?

Remember: -273.15 is absolute zero on the celsius scale - what happens to materials at absolute zero, and what is pressure caused by?
