Beauty is in the eye of the beholder, everyone has a different concept of what beautiful is and that is a good thing!
Personally I think she's hot but not as hot as Catherine Zeta Jones or Jessica Alba.

I think Cameron Diaz is a pretty woman. She started off as a model, actually, but that's all I know about her beginnings. I think Hollywood adores her - not because she is gorgeous, as she is actually "the girl next door" type - because she is very charismatic and the camera loves her. She may not have a lot of range as an actress, but she has found her niche and has gained a large fan base because of this.

I don't really know, but you are so right when you say there are more beautiful women out there. I don't know why she gets so much attention. Obviously, we know little about Hollywood and why certain "stars" are stars.
