Samuel L. Jackson wanted it purple. He basically just asked for it purple and Lucas agreed. In the background the colour of a lightsabre is due to a crystal within it so the lightbeam can be quite a few different colours. Red ones are not necessarily Sith but in the films they generally are to help make the baddies look eviler (and because it is a cool colour).
