Why does water dissolve many ionic compounds?

because water is a polar molecule. It has a slightly negative charge on the oxygen which attracts positive ions. The hydrogens in the water molecule will have a slight positive charge that attract negative ions.

H2O is called the universal solvent because it is polar with a + and - end to attract ions.
