My enviro teacher is my mentor and i wanted to know if anyone knows of a good gift idea for a...tree-hugger?

Not sure of your price rangge but check out the MercyCorp website........they have some really neat gifts for people who care about the enviroment and society

A card printed on recycled paper with a note saying a donation was made to someplace cool, like buying a piece of rainforest or greenpeace or the ACLU, etc

Or, a ball of hemp twine, and a crochet hook. That's always fun.

How about a harpoon gun or a nice spotted owl jacket?

OK but really.

A coffee table book of natural beauty, like mountains, waterfalls, or wildlife would be nice. Check that it's on recycled paper though.

Check redenvelope.com. My step dad is a horticulturalist, and so far he's loved the outdoorsy-stuff I've found there. They have little weather stations. Hope this helps.
