Where there's a will there's a way.
If you send her an email from your home system, she can track the ip address, and find out the general location that you live in. If she then continues on by asking your ISP for the billing address you are found. Its fairly easy to find someone if your motivated.

You are failing ot understand how it all works
1) you send email from your computer while you are connected to your ISP (via a server)
2) the email is then tagged with teh IP of the SERVER you were logged in at the time. That iP can change everytime you log in (ie dialup) or remain static, if you have cable or dsl.
3) the only information on exactly that IP is whatever is on record with ARIN . So if youre ISP has over 1000 ip's , that ip address will be associated with your ISP.
4) That server through which you used to send the email is the only server that can send it. Unless the ISP has set up a forwarding to another server, then that's the only IP that will address the email as having it come from you
5) when that server has received your command to send that email, that server then send it out to whater ISP is going to get it. And its that ISP's server that will hold it until whomever you sent it to logs into their account and downloads it
The only way she will know exactly where you live, is if she goes to court to get a subpoena to get your ISP to reveal that information to her. In fact she doesn't need your isp. All she has to do is hire a private investigator and they will find you. Hell, even a lawyer will find you. YOu cant hide from anyone. YOur information is accessible, if you are holding a job, have to pay bills, have a car and its registered, through insurance records, your tax forms, your phone numbers etc etc

It is possible for them to find out where the email was sent from. However this would be very hard for the average person and could involve obtaining non public company information. For your wife, no she cannot tell where it was sent from.
As for the email server. who ever told you any server can pick it up is wrong. When you send an email to say, email@sbcglobal.net, the internet takes the sbcglobal.net and looks at servers to find the ip address of sbcglobal.net and then forwards the email to that exact ip address. which points to ONLY servers for that company.
Dont worry, if you send her an email she herself cannot find you. Though if her lawyer has a smart enough computer tech he might research and figure it out. 99.8 percent of the time this wont even be a near possibility.
dont worry, emails are save.
(the billing address is part of that non public information, if your isp gives her your billing addres sue the frickin crap out of them)
If you are still worried, then just do this
www.hotmail.com
if you send an email from there, or yahoo, or any webmail. then the email is not comming from you or your ip address, the email message originates from the hotmail server. unless you have a microsoft hotmail server in ur basement you are 100percent save.

hey i dont know the answer before but i can tell u that yeah, someone who knows about ccomputers, ip address networking, yes he can tell u here u at, for sure, hey no matters what other peoples says it can be done, believe me.
