Engagement ring or some really nice bling.
At this point in the relationship you should know her...get her something having to do with her interests.
But just say no no no to a gift card.

I don't know how old you are or what you got her last year, but -Jewelry - a nice necklace and earrings. Do a dinner and a movie or go dancing. Drive around looking at Christmas lights. Get tickets to go out for New Years and give them to her for Christmas.
