Dave Schultz, hands down.
Probie was good, but it was a different era. Honorable mention to Dave Brown, who actually invented the "Rob Ray" move of remonving his own jersey at the start of a fight.
A better question might be, "who is the worst fighter of all time - answers limited to those guys who are actually expected to fight", like Donald "Huggy Bear" Brashear.
Best AHL fighter has to be Frank "The Animal" Bialowas.

Oliwa...the Polish fighter for the Calgary Flames when they had their cup run in 03-04. For all the did not have the pleasure of watching him fight....you missed a HELL of ALOT of GOOD fights. Hence why he no longer plays in the NHL....he was a fighter...the NHL has changed to much for a man like him.

Orland Kurtenbach was the best fighter the NHL has ever seen. Nobody was willing to fight him twice. He didn't fight that often but when he did he won. Besides being tough he was also a good hockey player.
