You could go to school of pharmacy and become a pharmacist. The demand is so high that the starting pay will usually be six figures. If you want a quicker route LPN or RN is always and option too.

Nurses and Pharmacists. Also, tradesmen like electricians, carpenters, etc.
All the baby boomers in these fields are getting to retirement age. So there is more and more of a shortage.

There is a real shortage of nurses right now and elementary teachers. I've also heard that accounting is losing people all the time. Hope this helps.
