It's hugely ironic, don't you see? Because he is the opposite of civilized. Sure, he has fine china and crystal and silver and the best of everything; he appears civilized on the outside. But inside he is an animal, playing an animal's role: predator in search of challenging prey.

it's ironic (though Zaroff wouldn't think so) because killing humans is far from civilized

I felt like he is so into hunting humans that he doesn't believe that it is wrong or uncivilized. That maybe he isn't sick in the head but has a gift which he is using to the best of his ability.
