These are Kits where you Snap Pieces together.
In Japan there are Puzzle & Snap Kits. You may perfer Japanese Models once you find out what is actually made there (some popular things/Models in the US are actually from Japan,.. ).

I remember my friends used to make castle models with matches and glue... matches and sticks are generally good for battlements, keeps, log houses...
Actually, you can do nearly everything with stuff you have at home. Old newspapers are a good material, and when you mix flour with water you get a natural, cheap and rather good glue for the newspaper models... to make them easier to form you might want to make sure that the paper is damp or even wet. I have made a model of a mountain with a cave once. After painting with regular paints it looked really cool :) After you make the model, once it is dry you have to paint it white first, so you will be sure that the colors will be nice. You can paint it as you like after it dries up. You can make a moss effect by using very dry brush or by gluing finely cut pieces of green wool or something similar. Only remember not to make to thick layers out of the wet paper, because they might have difficulties to dry later.
My friend once made a model of carbon dioxide out of chocolate. She used table tennis balls as a mold for the chocolate...
You can make models out of practically everything, just find some junk and be creative! A bottle is a perfect base for a rocket model, and if you would be very determined to be original you can even buy some wool, learn to knit, and make a woolen model ;) It's all about the idea really :) Just look at a thing, and try to think of something cool that has similar shape, or a similarly-shaped part.
