Anything with really good animation-like GITS or FFAC or good martial arts movies because some of them are hit or miss.
Just want to watch more-but its always difficult to know whats out there because it kinda feels like an underground market!

For good kung fu id reccomend you take a look at the hong kong movie sites for titles but they are hit and miss for story line but the kung fu is always good.

Try - Ninja Scroll, Project A-Ko, anything akira kurosawa, Ghost in the shell, Akira, Gundam, Appleseed - those are the classics.
If you like RomCom Anime try - Love Hina, Full Metal Panic, Tenchi Muyo, anything studio ghibli, Oh my Goddess
I could go on for hours...but I won't! Watch Final Fantasy - Advent Children as well.
Oh just thought of something - go to Forbidden Planet and HMV to find good selections - HMV have a anime sale on at the moment. Amazon have a good selection online as well, if you have a NTSC compatible DVD then you can get stuff from the states that we can't get over here!

There are none.
Manga and movies display a different form of fighting called "movie fu" which may resemble fighting (as people are hitting and bieng hit) but is not really fighting just choreographed moves made to look like real combat.
Real martial arts and fighting is about bieng deceptive so you can't tell what is going on. Movie fu is about displaying flashy and intricate moves that are obvious so the audience will be entertained.

Naruto - Ninjas fighting, using ninjutsu/genjustu/taijustu and others, summons, and the Shukkaku/Kyuubi, and all. Its a great anime and you should read its manga too. There's the 'martial arts', which actually is taijustu used by Rock Lee and Maito Guy-sensei. The fuzzy eyebrows.
Bleach - Shinigami fighting Hollows/Bounto/Arrancar(Manga) and each other-eg. Traitors like Aizen and Gin, using zanpakutos, shikai, bankai and kido, who can miss it. Although i'm not sure whether there's martial arts?? :)
