Well you could research the different skin types of ethnic groups, then do a project that suggests a skin care routine based on the qualities of the different skin. For example, whites would need to wear a daily moisturizer with sunscreen.
You could even suggest bath products that are best for the different skin types, such as salt scrubs and body creams and lotions.
If you are interested in doing this, I suggest you go to the Clinique counter in the mall and look at their little gizmo that helps you select products based on skin type. It only asks a few questions such as hair and eye color, if your skin has freckles, if you sunburn, tan, or too dark for it to effect you. This is a good system, but you could really expand on it and go into a whole head to toe skincare routine.
You actually don't even have to include ethnicity because many people are mixed race. You could just have a quiz that people fill out, and have a scoring system that will show them which types of products are the best for their skin types.

When I was at college we had to go around the class and get as near a tone as we could to everybody's skintone on their inner arm. There were 12 of us and they were so different it was unbelievable. We were all washed out winter white people but the variety in tones was huge.
