It filters the contaminants out of the air that is going into the intake, such as dust and pollen, that will cause problems with the engine!
There is also a cab air filter in some cars, that does the same thing with the air going into the passenger area, to make it more comfortable for people!

Some still have 3 functions, clean the incoming air to eng, fire containment in case of backfire, and it's used to silence or muffle the sound of the throttle sucking it all in.

It keeps road dirt out of the engine. If it's not there your engine will end up swallowing a big lump of cack and bugger up the valves and stuff.
