I've stayed at a youth hostel in the Amsterdam city center a number of times because I liked it and it is a really good price. It's clean and has a nice atmosphere. The food is pretty good, too (at least when I've been there).
It's called "The Shelter" and it's within walking distance (10 min.) from Central Station.
