The 120 minutes written on the cd means that if u want to burn audio files onto it to make it an Audio CD (DVD), then the total time for all the audio tracks should not exceed 120 minutes. For videos, irrespective of the time, the total size of the video should not exceed 4.7GB. So u can go ahead and burn all your videos onto DVD blank disks.

Reduce the resolution of your 3 hour movie and burn it. The other option is to cut the movie into two parts using softwares like
VCD Cutter
Chopper XP
Power Video Convertor
Adobe Premiere
and then copy them to two DVDs.
The other option others have already told you is to burn using dual layered DVD which have a capacity of 8GB.

1) Use software like "shrinkdvd" (not sure if I typed it right) or similar.
2) Remove some extras of your original DVD.
3) Choose lower quality for the new DVD. In most cases you won't see the difference.
