Red sky at night indicates that out to the west where the sun sets there are no heavy clouds in the sky. Therefore the dieing sunlight is coming directly through clear air and shows that the weather is going to be fine for at least a few hours. Shepherds used to stay overnight in the fields with their sheep to protect them against predators such as foxes. The prediction of a rain free night was then a great delight to them. Sailors have adapted it for their use along the way.

The old addage "Red sky at night sailors delight. Red sky in morning sailors take warning," is 98% right. Over the last 10 years or so I have observed this and I found that is it true most of the time.

Red skys at night occur when the prevailing winds are from the west. The setting sun shines through dry dusty air which makes it look red. As the dry air is in the west there is a very good chance the following day will be dry (remember the prevailing winds). The saying was probably coined by shepherds who, living in the open, noticed this phenomenon first.

Because Shephards delight over good weather as it makes their job earlier... red sky at night means the next day will be nice, red sky in the morning- shephards warning means it will be a rainy day and meat and potato= shephards pie! ;)
