What they are telling you is that the clutch that engages the A/C Compressor has gone bad - its the worn out bearings inside that clutch that you are hearing. If they sieze it will brake the serpentine belt, thus disengaging the alternator, power steering pump and also the water pump. All of that is bad. If its a 1.8L engine I believe there is just one belt and most likely the way the belt is routed on this car will not allow you to substitute a shorter belt and bypass the A/C compressor but I don't have a belt routing diagram handy for this car so I could not say for certain. On a 1.6L motor there was a separate belt that I believe ran the Power Steering and AC. Again, without a diagram I don't know if it can be bypassed.

The clucth have nothing to do with the conditioner seems to me to being a drive belt failure you can not bypass anything and why? get all your drive belts checked and i am sure you will be back on the road in no time
