Because they resemble steps, maybe, as in flight of steps.

Ever seen someone jump a bunch of hurdles in a row? They are pretty much in flight when they do it.

to over come the hurdles we have to be above the level of them - rather a little hight above - that is to be in the air - fly- may be for this it is called a flight.

Because when you jump over them you're in the air for so long
