Depends whether you're on pre-paid or if you're on a plan. If you're on a plan and your contract's still running, contact your provider to get your number changed. Otherwise, just get a new SIM card and change that in your phone. If your phone has a SIM-lock from your provider, you'll have to get a number from the same provider. If what you're trying to do is avoid someone/get someone to stop stalking you (for instance) I suppose this wouldn't be a problem. But if you're unhappy with your current provider you'll probably have to get your SIM-lock removed if you have one.

I have Sprint and all I had to do to change my number recently was call them and they changed it immediately for me. They said it would take up to 3-4 hours before I could start receiving phone calls at my new number, but it only took 30 minutes. I didnt have to sign a new contract or anything. It was quick and painless.

call up the phone company and ask them. some may require you to keep the number accorsing to your contract, others may allow you to change it asap.

I think you need to get a new SIM Card to be able to do that.
