First ask how the trip went and listen to every detail. Then, apologize for not having time to write. Doing this shows that even though you may have been too busy, you still care enough to apologize and are still interested in hearing the details of the trip in person. Maybe offer to take your friend out to lunch or something to go over it all.
You seem like a good friend, hope everything works out.
