What is the best way to capture a week-long conference for DVDs.?

I am volunteering to capture a series of meeting for a non-profit making organization. I am using a Matrox RTX.100 , a DV-Recorder & a three camera setup with a vision mixer. What's the most efficient way to capture this event.
