Neither response would be considered classy. Both are casual, informal responses. One is as aggravating to hear when used in excess as the other.

It would depend of the setting that you are going to use the word - if either of these grunts can be called a word.
Actually. to convey a correct meaning in a classic sense it would be correct to say: "Pardon me." Either in American or Canadian settings.
However if you are insistant on using slang - "Huh" would be more of a question and "Eh" would be used more as a request to have a repetition of the unheard sentence that caused you to have to use the slang term.

I just think "Eh?" sounds less stupid than "Huh?" Partly because of the phonetics of it, and maybe also because culturally we have images of really really dumb people going "huh?", and it just sounds less intelligent than a clearly articulated "eh?"

"Eh," for sure.
"Huh" has a rather abrasive, unpleasant, guttural sound, while "Eh" is quite a bit easier on the ears.
