Every time a goalie is injured and any player gets near the back up, the announcers joke that an Assistant coach would be next in line to replace him.

Covered in Rule 15 F

In regular League and Playoff games, if both listed goalkeepers are incapacitated, that Team shall be entitled to dress and play any available goalkeeper who is eligible. This goalkeeper is eligible to sit on the player's bench, in uniform. No delay shall be permitted in taking his position in the goal, and he shall be permitted a two-minute warm-up. However, the warm-up is not permitted in the event a goalkeeper is substituted for a penalty shot.

(NOTE) In the event that the two regular goalkeepers are injured in quick succession, the third goalkeeper shall be provided with a reasonable amount of time to get dressed, in addition to a two-minute warm-up.

In the old days the teams trainer would sometimes be the back up goaltender and some of them actually played when the regular goalie was injured during the game.

As JuanB says, a skater could be dressed as the goalkeeper during the game. On any given team there is likely to be someone who has experience in nets at another level of hockey.

I recall last season the Canucks got down to one goaltender and had no time to bring up a player from their farm system, so they had a University of British Columbia Thunderbirds goalie play backup on a few hours notice. I imagine he was both relieved and disappointed he never had to be put in the game.

If there is no other goaltender available. The referee has to stop play and allow the teams coach to dress up a player form the bench...It has happened before a long time ago.

But a player from the bench has to dress up or the game is forfeited.

They have a third string goalie somewhere in the arena in street clothes just in case of such a scenario. He gets his equipment on when the starting goalie decides to leave the game because of his injuries and sits as the back-up for the rest of the game.
