madrid, barcelona, sevilla, granada, cordoba , toledo...

madrid is the capital, where the king lives, so palaces, big streets, shops and restaurants, clubs...

barcelona...the same.

sevilla...was the capital of the kingdom during some period of the empire. so its a kind of old traditional spanish architecture. very beautiful.

granada, close to sevilla...nice small city

cordoba...the capitall of the arabic empire until 1492 in spain.

toledo...small city close to madrid. very beautiful

and then you can go also to the beaches!!ibiza, mallorca are great , but any beach in spain is great. the north is like cold but very beautful.( a kind of all green like in ireland) and the south is nice weather and really dry.
the center in cold but not so much rains.

From Jerez, you could visit Sevilla and then Cadiz. From there you could head down to the Costa del Sol and take in Marbella and Malaga, this part of Spain will probably have the best weather at that time of year. From Malaga head for Granada to see the Alhambra, but wrap up well as it is cold there in December.
Then on the way up to Madird you could visit Toledo if you have the time.
If you go to this page on my web site you can find out a little about these places:-

And if all what's in the other answer is too much for you, simply go to Barcelona and discover one of the best cities in Europe...
