I was watching the mask of zorro the other day...(only the beginning, the part where anthony hopkins is zorro). Anyway, there was this part where he whistles for his horse and jumps from a building on to the horse...and i was wondering, how do these guys do it? I mean if they did it in real life, wouldn't it hurt?

No, they don't do it in real life, not without padding and special camera angels and such. They smash break away chairs against each other, too, not real ones. And the glass that people fall through is really made of sugar.
