Since you are just looking for brands I could say the Big Three:
Ford, Chevrolet, Chrysler are good ones to start with. British,French and Italian cars would be also a fine brand to restore and customize. In my opinion cars become classic depends on the beholder him/herself. Cars 25 years and above are instantly classic 30 year old cars are more Antique than classic.
I would try not to suggest any brand but I would suggest more of what you're personality is first before you customize your classic car. To customize one's car is to express the reflection of your personality in that piece of automotive art whether it's a 74 Pinto or a 67 Porsche.
Here's some Classic Cars that definitely have made impression in my life.
1. 1969 Boss 429 Mustang
2 1959 Porsche
3. Any Year VW Bug
4. 1967 GT 500KR Mustang
5. 1967 Shelby GT500 "Eleanor" Gone in 60 Seconds
6 Steve McQueen's Bullit Car (Also a Mustang)

I'm not going to impose my likes but go with any pre 73' cars or truck from either Ford Chevy or Dodge. then you can modify them any way you please (chevy motor with ford or dodge rear end or whatever floats your boat)
