Make up your cornbread batter,then do like you would make pancakes.

Add a little oil to a skillet, make up your cornbread batter as usual, then drop it by spoonfuls into the hot oil (about pancake-sized). I like to add 1/2 can of cream style corn to mine (whole kernel corn is just as good).
