I know that state employees pay are public knowledge, but where can I go to find out how much they make?

Just go to your university library's reference desk. They are required by law to keep a book there that lists salaries of all employees.

In case you are looking for general information rather than specifics, here's how salaries work.
They vary by discipline (business > hard sciences > social sciences > humanities), by geography (urban > rural), and by rank (professor > associate professor > assistant professor > instructor/lecturer/adjunct), and sometimes by public vs. private and academic ranking (highly endowed private > underfunded public, but sometimes doctoral offering public > liberal arts private, and of course, 4 year college > community college).

In general terms, starting salaries for humanities/science PhDs at the assistant level at a state university range from 35-45,000 annually. Full professors in the humanities /sciences at a state university usually top out at about 80-90,000 annually.

go to the state's website and look for employment info (as if you were applying for employment). There should be a place to search by title or a chart of all titles. However, keep in mind a professor at a state college or university is not a state employee. Educators employed by the state mostly work at correctional or mental health facilities. In Illinois, many of the educators are part-time, not full-time, employees.

Check out your state website, and see if there is a department of Education, and call them.

Many newspapers also publish this info. You may want to call the newspaper and find out where they get it from.
