If their is allot of buds on the side of the potato it will be very easy and quick. Place the potato into a trash can filled with dirt. Place it in about 6 inches. Make sure you put holes into the bottom of the trash can for drainage. Water once every 5 days. Give partial shade. In one growing season (roughly 6-7 months) you will have lots and lots of potatoes to choose from.

I like what Tenn Gal said. You can also add straw to the dirt. The plant grows just as well and the dirt is a lot looser. When it is time to dig up the potatoes, because of the looser dirt, there is less chance of of harming the potato with a spade. In fact, you can dig them up without using a garden implement.

You buy seed potatoes (those with lots of buds (eyes) on them.
You then cut them up into pieces leaving 2 to 3 eyes per piece. You then drop 1 piece into a freshly prepared garden with good soil and cover with dirt. Keep watered.
When they come up, keep them covered with dirt so they will not burn or you will have green color on your taters.
Harvest them when the vines die down.
Dig them with shovel being careful not to cut the taters.
