In this country, Canada, a person is considered an adult at the age of 18, because when you reach that age all the rights and privileges of an adult are now yours. You may vote, join the Armed Services, get married without your parent's permission and anything else that adults can do but children can't.

random societal rules. I think it's pretty stupid but it's easier to use than say, when he kills his first deer or she has her tenth moon cycle or some other old way of declairing adulthood. And just out of curiousity, if you are an adult at 18 and can serve in the military, why can't you buy a beer until you are 21?

because you are no longer a minor. You are allowed to live by yourself, make your own desions, get married, get a tattoo, you know that kind of stuff. You don't have to listen to your parents anymore. That is when you get to have your own life with out your parents barging in it.
