shootouts only go towards team wins and dont affect player stats at all. The only player it affects for fantasy hockey is the goalie, for the win or the loss

Taken DIRECTLY from the NHL rulebook for this year:
"Regardless of the number of goals scored during the shootout portion of overtime, the final score recorded for the game will give the winning team one more goal than its opponent, based on the score at the end of overtime.
The losing goalkeeper will not be charged with the extra goal against. The player scoring the game-winning goal in the shootout will not be credited with a goal scored in his personal statistics."
So based on that (taken from page 181 of the rulebook) no, shootout goals do not count in any way shape or form.

It varies in different league, but generally no. Because it's not fair for the players that don't get chosen to shoot. Besides even all the good players suck at the shootout. And what about Jussi Jokinen? Heard about him before he went 10-for-10 on the shootout?

Once the 5 minute overtime is finished all scoring as for statistics end.
Nothing counts for the scorers or the goalie. Now it would not be really fair since mainly its just your top scorers that get to play in the shootout for good reason.
