I am confident in writing that any curricular activity that makes you unique in the application process to universities and colleges will show you as a well rounded student.
There are universities and colleges that do offer courses and programs in music with a guitar concentration. A quick search of the web unveiled at least two results.

I don't honestly know if colleges count guitars as band instruments. You can e-mail admissions departments at some schools in which you're interested and ask them about that. Extra bonus is that they'll note that you contacted them...and from their perspective interested students get a second look.

In general, all skills and activities -- assuming they're positive -- can help.

Schools like to see a passion for things, so if you've been playing for 5+ years, involved in other clubs throughout high school, etc., it'll give them a sense that you're committed, know how to work with groups, perhaps take on leaderhip roles, etc.

Good luck to you.
