Oak wood is harder, so I would say pine holds more water.

I would guess pine because of its coniferous nature and need to hold water through long periods of cold weather without liquid water.

The more dense the wood, the less space it would have to hold water.

Pine depending on species and where it was grown is likely to be much less dense, and therefor able to hold more water
