Jaguars were notoriously unreliable, although this improved somewhat after Ford bought the company. Parts and repairs, as well as maintenance, will be very expensive.
The 3000GT was available with three variations of the 3.0 V-6 engine...the SOHC, the DOHC, and the DOHC with twin turbos, known as the VR-4. The SOHC version is very reliable, and the DOHC is pretty good.
One problem with the VR-4 with the twin turbos, no matter what year, is that the higher performance engine requires even more stringent attention to maintenance, and if it isn't done, reliability suffers. I have a Stealth Twin Turbo, which has the same engine, and I have almost 200,000 original miles on it; the engine has never been opened and it doesn't smoke or burn oil. But as these cars get older, and drop in price, more and more kids get ahold of them who don't know what they're doing or appreciate them, and they either can't afford proper maintenance or don't know better. Then they run the hell out of them, and then complain because it broke down.
If you have never owned a Stealth or 3000GT, I would suggest getting the base model with the SOHC engine or maybe with the DOHC, and leave the VR-4 or twin turbo model for those with more experience.
Any car that has been abused will be unreliable, especially if it has not been properly maintained. If this is your first car, get a Honda or Hyundai or Neon, something disposable. Learn how to take care of it, and how to drive it responsibly, before acquiring a higher class sportscar.

A jag is nothing more than a high maintenance ford and a 3000gt is expensive to repair. Parts shouldn't be hard to find for the Jag but the 3000gt on the other hand will be more difficult to find parts (new or used) due to the small number of years the car was produced. Personally I like the 3000gt. The Good news is both hold some what of a good resell value.

Jags were among the most unreliable made in the past. they have improved greatly since Ford took them over (surprising isn't it?). If you drive it normally and take good care of it, a Jag should be no worse than most other cars but - if you treat it like the spots car it is meant to be (and this goes for the mistu as well), expect problems.

some jaguars models are and some models are not. like the S type and X type are not reliable. XK's are reliable. finding parts for them are not hard, because they used mostly the same parts come from the Fords bin. Mitsubishi i dunno know because you didnt tell me which years, which is kind of important.
