My Dad has just bought a field at the back of his house which he wants to landscape, plant trees, build a pond, create a fenced area for sheep, and generally make a nice haven for local wildlife. Does anyone know any books I can buy that will be a good guide?

First contact your county Soil and Water conservation (SWCD), they are in the phone book under Government (and it's free), they can help with site selection and building advice, including names of contractors, to build the pond. They MIGHT have a ground cover/wildlife packet sale (trees/etc) in the spring to plant around your field (they won't be large trees-maybe 25 or so to a packet), you will have to ask them. They can also advise you on fence for your animals, you may need to fence off your pond from your sheep/etc (its a pond environment issue).

I realize this didn't answer your question concerning books, their are a # of those available, look under building ponds/sheep/fence/plants/landscaping.

Good Luck!
