Religion is not nationality. Nationality derives from nation, which is synonumous with country. Your nationality would be Iraqi. Your religion is only relevant if you are asked about it, or if it could affect your status, such as if you're applying as a refugee.

But, if anyone asks more than one question about your origins, you could say that your family is of Arab-Catholic descent or, that your ancestors are Christians from Iraq.
