IF the story is true - and there are reasons to doubt it - then they were Turks. Turkish officers who were at the barracks in question always denied that any such incident took place. Lawrence was not the most truthful or accurate of narrators, and slandering the Turkish Army would have gone down well with his Arab friends, and provided a "sensation" that helped to sell his book.
