If you are talking about when you want to send an email, it means you write in the message you want to send to who ever you want to email, in the space provided for you. Like you would click on adresses in your email and then find the person that you want to email, click on where it says to, and then click send and then it will have compose there, click there and it will take you to where you can compose your message.

Write a letter. Click on compose another screen will come up, you write your letter, go up to subject and enter the subject and then go up one more and enter email address of who ever you want to send it to.
