If I can add a second, it would be REM covering Love is All Around ~ I had that one played at my wedding :)

Rachael Sage does a pretty spectacular cover of Anything Anywhere by Melissa Ferrick. It's actually better than the original.
The Dixie Chicks do a great cover of "Landslide" by Fleetwood Mac.
And Dar Williams and Ani DiFranco do an awesome version of "Comfortably Numb" by Pink Floyd.
