Okay, if you are just starting out, I highly recommend "Fruits Basket". It's about a girl who comes into a cursed family and some people in it turn into animals of the zodiac when hugged by the opposite sex or feel in danger. It is very good. about 26 episodes each about 25 mins.
Some other good ones: Chobits, Naruto (over 200 episodes)
also, Love Hina has a good plot but it's kinda perverted, but the story is really good.
Also, check youtube.com and search for anime, it will come up with some good ones, you can look at AMVs and stuff to get the general ideas.
In case you didn't know since you are new to anime, an AMV is and "anime music video" people combine short clips from the anime with a song of their choice. I hope this helps.
Try reading manga too, it's good.

Good plots, interesting characters:
-Fullmetal Alchemist (this is ranked very highly on my list)
-Suzumiya Haruhi no Yuutsu (The Melancholy of Suzumiya Haruhi)
These two have manga versions as well. I think the manga for SuzuHaru was the original, whereas FMA's manga was definitely the original that spurred the creation of the anime. The plotlines vary a lot though.
Standard Anime Entertainment:
-Ouran Koukou Hostobu (Ouran High School Host Club)
-etc.

It all comes down to what you are looking for.
Do you want action, comedy, drama or romance?
For Action, you can't do much better than Bleach. Comedy, I'm going to say Excel Saga. Drama, I don't know. I don't like much drama. Romance, I would have to say Please Teacher.
There are always the classics, the ones that are good regardless of your tastes. Like Cowboy Bebop, you can not go wrong at all with Cowboy Bebop.
But again, these are just ideas, I suggest researching what genres or subjects intrest you.

Here are some of the animes with their descriptions that I highly recommend:
Honey and Clover I ~ Takemoto Yuuta, Mayama Takumi, and Morita Shinobu are college students who share the small apartment. Even though they live in poverty, the three of them are able to obtain pleasure through small things in life. The story follows these characters' life stories as poor college students, as well as their love lives when a short but talented 18 year old girl called Hanamoto Hagumi appears.
Honey and Clover II ~ The sequel and final installment to the highly popular series once again delves into the life stories and love lives of Takemoto Yuuta, Mayama Takumi and Morita Shinobu. The story continues where the first season left off, after Takemoto's self-discovery journey around Japan. Of course, the love triangles and tribulations they face will continue, and eventually decide the paths to their future.
Gintama ~ Sakata Gintoki is a samurai living in an era when samurais are no longer needed. To add to his troubles, oppressive aliens have moved in to invade. Gintoki lives with Kagura and Shinpachi, taking on odd jobs to make the world a better place...and to pay their rent.
Bleach ~ Kurosaki Ichigo is a 15 year old boy that has an ability to see ghosts/spirits. Because of his ability, he is able to meet a female death god (a.k.a Shinigami) named Kuchiki Rukia. To save his family and friends from unwanted soul-eating spirits (Hollows), Rukia transfers her Shinigami powers to Ichigo. As Rukia takes on a human shell, together they solve mysteries involving spirits and hollows until from the spirit world comes 2 other shinigamis explaining that it is illegal to transfer Shinigami powers to humans and Rukia exceeded the time limit to stay in the human world. After they sentence her death for breaking the laws, Ichigo snaps and swears to everyone he will retrieve Rukia by breaking into the spirit world.
Beck: Mongolian Chop Squad ~ Tanaka Yukio, better known by his nickname Koyuki is a 14 year old who feels disconnected from life in general. Through the act of saving a mismatched dog, he meets guitarist Minami Ryuusuke, and becomes involved in Ryuusuke's new band BECK. Koyuki's life starts to change as the band struggles towards fame.
Paranoia Agent ~ An elementary school kid dubbed with the title "shounen bat" or "lil slugger" has been going around attacking people with his bent, golden bat. Now, two detectives are investigating so they can stop this kid from making any more attacks, but they will find out soon enough... that this case is much more than they expected.
Asatte no Houkou ~ Karada is a young girl who hates being treated like a child and who wishes to be grown up. Shoko is an aloof, unhappy young woman who has just returned from overseas. When they meet by coincidence one night at a local shrine where they both like to make wishes, they exchange ages.
REC ~ Fumihiko Matsumaru is an average salaryman with no girlfriend. He invited his colleague Miss Tanaka to a movie but was stood up. Right at the time he was about to toss tickets into a trash can, a cute girl appeared and asked him not to waste those two tickets. After movie and dinner, he escorted her home and found they live in the same neighborhood, yet unfortunately her apartment caught on fire hours later. Having nowhere else to stay, rookie seiyuu Aka Onda moved to Matsumaru's place, and the two had started a "more than friend but not yet lovers" relationship under the same roof while keeping this secret from their employers.
Slam Dunk ~ Sakuragi Hanamichi is a junior high punk used to getting into fights and being rejected by girls but upon entering high school he meets the girl of his dreams, Haruko Akagi. He will do anything in order to win her heart including joining the school basketball team that is aiming to conquer the nation lead by Haruko's brother. The problem is that Sakuragi has never played basketball before and a freshman sensation is stealing the spotlight and Haruko's affection from him.
I hope you like them as I did.
