"Appendix" is additional information (if applicable) added at the end of a paper, a book, a dictionary or a thesis. A lot of works (if not most of them) do not require an Appendix (or Appendices). Also, "appendices" are listed separately. For example, Appendix 1, on p. 21; Appendix 2, on p. 22, etc. They are longer than footnotes/endnotes (one-page or even more). Although they support the text, they contain less important information (certain graphics, tables or questionnaires) that the reader may refer to if (s)he wants.

It's information that's too voluminous or cumbersome to include in the main paper. It is not uncommon to have mainly (referenced) charts, tables or graphs in appendices. But you could also put extra information which could be useful as additional information but not exactly critical to the paper.

I think the purpose of the appendix is to make the main paper more readable by keeping only the most essential stuff in it.

Oh, and to sort information better.. you could have Appendix A, Appendix B, etc. in which case the entire section should be labeled "Appendices". Handy if you have lots of extra materials to add.
