Are there any good fantasy books that consist of one book alone, no sequels or parts 2, 3, or 17?
I have been reading Robert Jordan's The Wheel Of Time. It seems to be a never ending story and I don't want to go into a "project" reading again.

The Seer and the Sword by Victoria Hanley, not full of magic, but the plot is great, especially if you enjoy adventure/romances
Any book by Patricia A. McKillip is really good, great imagery and in depth storytelling
The Once Upon a Time series (not a real series just a collection of books: different author's retelling fairy tales) Cameron Dokey is the best out of all the writers, the other books tend to be poorly written teen romances...
Beauty by Robin McKinley, an interesting retelling of Beauty and the Beast, nothing new though, but it's good. Mckinley's other works are okay, but some tend to stray into weird places...

Actually, I'm going to say say 'no'. OK, there probably are, but I don't really seem to own any of them. Maybe Lord Valentine's Castle by Robert Silverberg. There is a second book (and one that is basically short stories set in the same world), but LVC is a stand alone book.
I am also going to suggest Marion Zimmer Bradley's Darkover books. They are borderline fantasy/sci-fi. Although they take place on the same world, I think most of them can be read without reading the others. The first one that I read was called Hawkmistress!.
Oh, how about The Hobbit by Tolkien? You could read it without having to read the Lord of the Rings books.

A large part of the appeal of fantasy literature is the author's ability to establish and develop a convincing alternate world, and this often takes more than one short novel.
However, I'd suggest reading books by Diana Wynne Jones. She is one of the UK's most respected and well-loved fantasy authors. Some of her books have a few characters in common, but all are complete stories - and are not part of an everlasting chronicles series. I would recommend "Howl's Moving Castle" or "Charmed Life".

H.M. Hoover "This Time of Darkness"
Marion Zimmerman Bradely "The Mists of Avalon" (it's HUGE though)
