Because they changed the calendar we use, and the day that is now April 1 used to be the first of the year. The people who didn't follow the new calendar and celebrated the new year in April were called fools.

The most popular theory is that it was connected with the change from the Julian calendar to the Gregorian calendar in the middle ages, which shifted the beginning of the year from the end of March to January 1. Those who clung to the old ways were ridiculed. There are other theories that involve old celebrations of foolishness or tricks, but it isn't possible to know any of that for certain because it was peasant activity and not well documented, if at all.
