Even though Anakin had gone over to the dark side before his fight with Obi-Wan, he still had his original lightsaber. After the fight, Obi-Wan took his lightsaber, saving it for his son until Luke came of age. After this, Senator Palpatine gave him the parts to make another lightsaber, this time the traditional color of a Sith Lord, the red lightsaber.

More than likely it was because he had just turned and didn't have the time to think or care about changing light sabers. He was also trying to keep the fact that he had turned to the dark side a secret for the time being. Changing to a red light saber would have definitely given away his new Sith status.

Because it was still the same light saber. It's a piece of weaponry, not a mood ring. If a US soldier back in the Viet Nam war had defected to the other side would his M16 turn into an AK47?

Lights sabers don't change colors, he got a new one given to him by the lord sidious with red crystals in it which makes a red light saber triditional color of siths.

The lightsaber isn't like some interstellar mood detector. It's just that the bad guys tend to pick red and the good guys the other colors.
