If this is a public school, stay away from Christmas themes and go with winter only. You could get many complaints if it is too "politically incorrect". I learned this after many years as a room mother and library aide in a public school.
Think snowmen, penguins, sledding, igloos.
If there is a similar theme running through various classes, decorate to reflect that. Is there a reading contest, or a social studies area that several classes are working on? Maps or book topics might work.
