Ireland and Mexico are both overwhelmingly Catholic countries where people have large families. Both countries have traditionally had high unemployment and many people from both nations have had to immigrant to America to find employment (about 30 million Americans are fully or partly of Mexican descent, and another 50 million Americans are fully or partly of Irish descent). Also, beer is the national drink of both countries and Football (what Americans call "soccer") is the national sport of both Ireland and Mexico.

i guess Ireland and Mexico are both traditionally Catholic countries where the family is respected. Also, both countries have struggled economically (least until the 1990s) given bad government policies. Furthermore, both countries have experienced large waves of emigration to more economically powerful (and domineering) neighboring countries. The Irish have typically emigrated to the UK and the US, while the Mexicans to the US. Such common factors help build a common psyche between these peoples.
