I dont think GitS and Death Note are mind twisting really. Theyre more like "the thinking man's anime". Deathnote is among the best for this situation. FLCL has a twisted feel but it has more of a cool feel at the same time.

Now the ones that ive seen lately that are really twisted would be Melody Of Oblivion and probally Elfen Lied. I say probally because theres more mind ripping than mind twisting. These are the only animes i can think of for now that do have this twisting quality but their plot is decent enough for someone to watch. Cause these kind of animes are pretty much crappy.

Now for twisted in a hilarious way. I would have to go for Bo Bo Bo. It bends itself off the original storyline many many times pulls it off in the most funny ways. Best anime comedies ive viewed.

"Mind twisting" in what way?

Ghost in the Shell:StandAlone Complex has some really interesting storylines, and Matrix-like "whoa" concepts. Paranoia Agent is also good.

Fooly Cooly (FLCL) and Excel Saga are just plain weird and twisted, in hilarious ways.

Going old school, there's Akira and Wicked City.

And of course the most graphically disturbing & twisted stuff falls into the Hentai category- nothing really comes close to Urotsukidoji:Perfect Collection.

ghost in the shell and death note death note is a comic that is really deep and mind twisting u have to be smart to understand what is happenning right away.
