I think that might be hard to do without a TON of research. Here's an idea, use regular hamster chow, and supplement it with different things, fruits, vegetables, seeds, and maybe you can figure out what he likes, and does'nt like. But don't ever take away the regular food to make sure he is getting the nutrients he needs.
Make sure you do a little research before you start the supplementing.

Seed, mainly the black, stripey, sunflower seeds. They love those. Maybe some broken cornflakes as well?
If that doesn't work for you, try visiting your local pet store and looking at the contents on a box of hamster food. Write them down, collect the ingredients and make your mix. :-) Sneaky, but cheaper and more fun.
Good luck. :-)

Hamsters like fresh vegetables/fruits such as carrots, apples, pears, green beans, corn.
only give what will be eaten . anything left over should be taken out , it will rot if you leave in over one day.
give small pieces.
they also like nuts, berries, alfalfa, hay.
Buy a hamster book it has all the information you will need .about every thing.
Do not ever give celery or string beans. The strings can choke them to death. It has happened .
