My date has picked up a stunning 'blood' red dress, and I want to accent her, without matching her by wearing a red dress shirt myself.

Well if your date is going to look stunning, you will also want to. Maybe black or white? A black suit with a red shirt though would probably look very good.

Why not which roles, you wear her red dress & let her wear a suit. I had a company switch party last new years & it was fun dressing as a woman.

How about a tie that coordinates with her dress.... or a patterned shirt that has the same red but other colors as well....

I would say wear whatever is appropriate work attire at a minimum. Unless the party is stated as a "black tie" event, then go all out.
